Ingredients:
1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
1 tsp vanilla
Directions:
Combine all ingredients in a bowl.
Mix the ingredients thoroughly and let it chill in the refrigerator for half an hour.
Once the mix is chilled, roll into balls and enjoy!
Perhaps make 2 batches...these will disappear fast!
My son gave these energy bites a two thumbs up!
If anyone in your family members have allergies to any of the ingredients, you can substitute almost anything . Some suggestions mentioned in Smashed Peas and Carrots are:
-Soybutter
-Almond butter
-Cashew butter
-Sun butter
-Agave nectar
-Maltitol syrup
-Crushed cereal
-Wheat germ
-Whole wheat flour
-Granola
-Raisins
-Dates
-Craisins
Do they taste healthy? I saw the ground flaxseed and got worried. : )
ReplyDeleteLOL! They don't taste healthy at all...my kids are my proof...they absolutely loved these! ;-)
DeleteThese are delicious! I've used 1/4 c Nutella and 1/4 c peanut butter before as well...they don't last long. I always skip the coconut since I don't care for it and it's still just as good. The last batch I used almond butter and for a crunch dried banana chips. :)
ReplyDeleteThis sound great too!
DeleteYum! I love Nutella...will definitely try that next time. ;-)
DeleteI may just have to make these too!! Thanks for sharing.
ReplyDeleteMommie...Again
You're welcome! ;-) Thanks for visiting!
DeleteDo you need the flaxseed?!?
ReplyDeleteI think you can omit the flaxseed. I personally like it, and I couldn't really taste it at all.
DeleteI made these two days ago and we have already eaten them all - they were amazing!!! They seem too good to be considered "healthy" :) Any chance you have any nutritional information on these?
ReplyDeleteI made these last weekend and my little one loves them (she's a picky eater too). Thanks for sharing.
ReplyDeleteI've made these twice already. They come in really handy as a super quick breakfast if I'm running behind in the morning. I can never seem to eat more than three though, they really fill me up.
ReplyDeleteQuestion. Can I use honey tasting Agave instead of honey?
I think you can replace any ingredients. ;-)
DeleteWhat type of oatmeal? Will rolled oats work?
ReplyDeleteMade these tonight to take to a volleyball tournament tomorrow (my 10 & 12 yr. olds play). They're in the fridge setting up now. From what I licked off the spoon, they taste pretty good and I feel like they will be a very filling snack. I'm still not too sure about the flaxseed. I wanted to substitute wheat germ or honey wheat germ but couldn't find any at the Walmart I was in. Hoping that as the mix has a chance to set up that the PB and honey flavors will become the dominant ones with the chocolate chips. I used less flaxseed than the recipe called for but I still felt like I could really taste it from what I ate off the spoon. It could have just had a higher concentration stuck on there, however. I really do think these will taste great tomorrow when we try them.
ReplyDeleteFlax seeds can be hard to digest as is. I always have to grind mine into a powder. The flavor is good though, and they're good for you. They supply the omega fats your body needs to be healthy.
Deletegreat when you run out of ideas.
ReplyDeleteYumo - they look great, we will have to try them :-) And your kids look so happy as they make them too.
ReplyDeleteI have a linky for sharing baking with your kids posts and I'd love you to join us http://happywhimsicalhearts.blogspot.com.au/2012/04/happy-lil-s-are-baking-16-and-giveaway.html

Sounds great. I have a few recipes I am trying out to make for when I am laboring.. I'll try this one too! I use ground flax seed in my green smoothies, so I have that on hand!
ReplyDeleteI follwed you over from For the Kids Friday and my post is here: http://likemamalikedaughter.blogspot.com/2012/04/enchanted-childhood-playschool-april.html
Yum Yum, I have tried some no-bake peanutbutter ball before and they were gross so I am excited to try these. Thanks!
ReplyDeleteHope you liked them!
DeleteMade them tonight with dark chocolate chips and they were really good!
ReplyDeleteMmmmmm I love dark chocolate! Will have to try that next time!
DeleteOk...I am going to make these right now. LOL
ReplyDeleteMy daughter has a peanut sensitivity so we found a product called "WOWbutter". It tastes just like PB and looks like PB and smells like PB but it is soy. WOW! Can't believe it's not PB, ok that might be going a bit far. :)
It is originally a Canadian product but can be found in many US stores.
Check out http://www.soybutter.com/index.html
They even have a School Safe program to share with schools.
Ok going to make now and I will let you know how my girl likes them.
Emma
Awesome thanks for the tip on soy butter!
DeleteSUCCESS! Thank you so much. My 5 year old thought it was cool to have cookies for breakfast.
ReplyDeleteHappy Mommy!
Emma
;-)
Deletewe loved them, love your site, great things for my grandkids.
ReplyDeleteThanks for the compliment! ;-)
DeleteDo you use sweetened flaked coconut? or just regular? Thanks :)
ReplyDeleteThe sweetened. ;-)
DeleteQuick oats or regular oats? Thanks for the recipe!
ReplyDeleteWe make these ALL the time with little variations. The best trick is to make them in a 8x8 glass pan. Just press the mixture into the pan, chill one hour cut into squares.
ReplyDeleteJust made these...Awesome! I also added craisins to my second batch....yum! Thanks!
ReplyDeletei stumbled upon these sometime ago and my kids love them. We store them in the freezer and make a perfect quick cool treat.
ReplyDeleteWould adding protein powder to this recipe be okay??
ReplyDeleteThese look so yummy! and easy! Thanks.
ReplyDeleteI have made these a couple of times now and love them. Toasting the coconut first is a tasty variation to the recipe.
ReplyDeleteHow do you keep them fresh? Do you put them iin the refridgerator.
ReplyDeletewhat kind of oats do you use? Quick???
