No-Bake Energy Bites

I was on Facebook the other day and another blogger was raving about how delicious these No-Bake Energy Bites were.  She wasn't kidding.  They were so good I was afraid that my kids would eat them all before I could even get a picture of them.



Ingredients:
1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
1 tsp vanilla

Directions:
Combine all ingredients in a bowl.




Mix the ingredients thoroughly and let it chill in the refrigerator for half an hour.



Once the mix is chilled, roll into balls and enjoy!


Perhaps make 2 batches...these will disappear fast!



My son gave these energy bites a two thumbs up!


If anyone in your family members have allergies to any of the ingredients, you can substitute almost anything .  Some suggestions mentioned in Smashed Peas and Carrots are:

-Soybutter
-Almond butter
-Cashew butter
-Sun butter
-Agave nectar
-Maltitol syrup
-Crushed cereal
-Wheat germ
-Whole wheat flour
-Granola
-Raisins
-Dates
-Craisins

  2. These are delicious! I've used 1/4 c Nutella and 1/4 c peanut butter before as well...they don't last long. I always skip the coconut since I don't care for it and it's still just as good. The last batch I used almond butter and for a crunch dried banana chips. :)

    1. I think you can omit the flaxseed. I personally like it, and I couldn't really taste it at all.

  5. I made these two days ago and we have already eaten them all - they were amazing!!! They seem too good to be considered "healthy" :) Any chance you have any nutritional information on these?

  7. I've made these twice already. They come in really handy as a super quick breakfast if I'm running behind in the morning. I can never seem to eat more than three though, they really fill me up.

    Question. Can I use honey tasting Agave instead of honey?

  9. Made these tonight to take to a volleyball tournament tomorrow (my 10 & 12 yr. olds play). They're in the fridge setting up now. From what I licked off the spoon, they taste pretty good and I feel like they will be a very filling snack. I'm still not too sure about the flaxseed. I wanted to substitute wheat germ or honey wheat germ but couldn't find any at the Walmart I was in. Hoping that as the mix has a chance to set up that the PB and honey flavors will become the dominant ones with the chocolate chips. I used less flaxseed than the recipe called for but I still felt like I could really taste it from what I ate off the spoon. It could have just had a higher concentration stuck on there, however. I really do think these will taste great tomorrow when we try them.

    1. Flax seeds can be hard to digest as is. I always have to grind mine into a powder. The flavor is good though, and they're good for you. They supply the omega fats your body needs to be healthy.

  12. Sounds great. I have a few recipes I am trying out to make for when I am laboring.. I'll try this one too! I use ground flax seed in my green smoothies, so I have that on hand!

    My daughter has a peanut sensitivity so we found a product called "WOWbutter". It tastes just like PB and looks like PB and smells like PB but it is soy. WOW! Can't believe it's not PB, ok that might be going a bit far. :)
    It is originally a Canadian product but can be found in many US stores.

  20. We make these ALL the time with little variations. The best trick is to make them in a 8x8 glass pan. Just press the mixture into the pan, chill one hour cut into squares.
